Abstract:

Interest in understanding the digestion behavior of starch in the presence of dietary fibers is growing due to the ability of dietary component to control the release and absorption of glucose. This presents an outstanding opportunity to improve the quality of food products by incorporating dietary fiber into starchy food products. The physicochemical properties of different fibers and their behavior in the gastrointestinal tract (GIT) differ. To test the efficacy of these different fibers on starch digestion, static in vitro digestion models under conditions that mimic the human GIT are frequently used. Indeed, many efforts have been committed to the development of various static in vitro protocols for starch digestion. Though not considered as the gold standard in digestibility studies in food science and technology, static simulated models provide a useful alternative to in vivo techniques for rapid screening of the digestibility of food products under conditions that simulate the human GIT. This review presents the current status and development of digestion techniques for simulating digestion conditions in the human GIT, with particular interest on starch digestion in the presence of dietary fiber in the three phases of digestions including the oral, gastric and the intestinal steps. This summary can benefit investigators in developing static in vitro digestion models designed to simulate starch digestion with relevant values of the quantifiable parameters, including pH, enzymes and simulated digestive fluids.

Association of maternal depression with dietary intake, growth, and development of preterm infants: a cohort study in Beijing, China

Abstract:

This study aimed to explore the association of maternal depression with nutrient intake, growth, and development of preterm infants. A cohort study of 201 infants was conducted in Beijing. Based on the gestational age of an infant and status of the mother, the infants were divided into four groups: non-depression-fullterm (64), non-depression-preterm (70), depression-fullterm (36), and depression-preterm (31). Data on sociodemographic characteristics, nutritional intake, growth, and developmental status of children at 8 months (corrected ages) were collected using a quantitative questionnaire, a 24-Hour Dietary Recall, anthropometric measurements, and the Bayley-III scale. A multivariate analysis was used to evaluate the effects of maternal depression and preterm birth on infant growth and development. The energy, protein, and carbohydrate intake in the depression group was lower than the recommended amounts. The depression preterm groups indicated the lowest Z-scores for length and weight and the lowest Bayley-III scores. Preterm infants of depressed mothers are at high risks of poor growth and development delay.

Abstract: Food security, the need to meet nutritional requirements, and four main problems for food protein security in China are analyzed. From the perspective of residents’ nutritional requirements and balanced dietary patterns, the conclusion is that food security in China is in essence dependent on protein production and security of supply and that fat and carbohydrates supply in China can reach self-sufficiency. Considering the situation of food protein production and consumption in China, policy suggestions are made, which could ensure a balanced supply and demand for food protein and food security in China.
