食品安全是食品工业发展的基石，亦是保障人民生命安全、健康的根本。食品安全须涵盖从农场到餐桌的整条食品产业链，其中致病性微生物和农兽药残留检测与控制、膳食营养调控肠道微生态与人体健康等领域已成为食品安全新的前沿热点。为深入交流以上焦点领域的最新进展，探讨食品安全未来的发展趋势及其中的焦点问题，中国工程院举办了食品安全与健康国际工程科技高端论坛。为了进一步深化高端论坛中食品安全与健康领域的学术交流，分享最新研究成果，中国工程院发起了食品安全与健康专题的出版。中国工程院院士、广东省微生物研究所吴清平研究员担任专题主编，中国工程院院士、江南大学陈卫教授，英国切斯特大学Christopher Smith教授担任执行主编。来自国际、国内的食品安全与健康领域的著名学者成为本专题编辑委员会的成员。

Engineering 食品安全与健康专题主要关注该领域的热点、难点问题，展望食品科技的发展前景。本专题共邀请论文7篇，分别由庞国芳院士、陈卫院士、Casimir Akoh教授、Christopher Smith教授等来自中国、美国、英国等领域内的知名学者撰写。专题涵盖食源性致病微生物危害形成机制、食品中农兽药残留检测与防控、食品安全控制新技术、食品加工与安全、微生态与健康等研究方向，发表的论文集中体现了食品安全与健康领域的最新进展与成果。
