摘要

中国传统食品具有悠久的历史和丰富的文化内涵,随着中国食品工业的飞速发展,中国传统食品工业化、现代化步伐也在加快。然而,由于对传统食品的意义认识不到位、科研投入不足、制造装备落后等问题,我国传统工业化进程已经受到了严重的影响,这在一定程度上限制了我国传统食品的发展。本文分析了中国传统食品现代化的发展趋势,对中国传统食品现代化过程中存在的主要问题进行了剖析,并提出了中国传统食品现代化的主要任务。

Abstract

Chinese traditional food has a long history and abundant cultural connotation. With the rapid development of food industry in China, the traditional food industry also made a great progress. However, the modernization of Chinese traditional food industry has been restricted seriously due to the insufficient recognition, weak fundamental research and low level of mechanization. In this paper, the development tendency of Chinese traditional food industry was analyzed. The main problems existed in modernization of Chinese traditional food industry were pointed out. The primary mission for the modernization of Chinese food industry was put forward.
